Kokkaffe are to many swedes associated with grandparents. An old tradition that only lives in northern Sweden theese days, some say. But oh so wrong they have! Kvarsebo in Östergötland is still serving kokkaffe in their coffeeshop, Qvarsebo Kaffe.
It's not easy to get a good kokkaffe. But here are some tips for you how you can do it:
- Use freshly ground coffee (Coarse grinding, snap coarser than the French press)
- Use cold & fresh water
- Pay attention when the coffee is starting to boil & then pull the jug from the plate, wait a few seconds and then return the jug. Repeat that process 7 times!
- Leave the coffee to stand for a few minutes, or use the grandfather's trick & pour a few drops of cold water into the beaker to sip the swamp
- Ready to Pour & Enjoy!
